Salmon, Scallion and Corn Cakes
Fish cakes often use mayonnaise or mashed potatoes as a binder; both ingredients add calories and not much flavor and, in some cases, make for a pretty heavy cake. Instead, coarsely chopped fresh fish can be mixed with cooked vegetables, herbs, aromatics and just enough bread crumbs and liquid to help bind it all together. Each ingredient adds a distinct taste and texture.
Peppers Stuffed With Summer Vegetables.
These are stuffed peppers reinvented: light, packed with the tastes of summer vegetables and fresh herbs and just plain delicious. They will wipe away any memories of old-style specimens.
Ginger-Plum-Glazed Pork Skewers
Here, a lean, center-cut pork loin is treated to a glaze made with ginger, sesame oil and a fresh plum. The preparation is summery and light. The skewered pork cooks quickly on the grill with little prep time. A side benefit of making your own marinade and glaze: sodium control.
Couscous With Swiss Chard and Tomatoes
Whole-wheat pearl couscous is a revelation: full-flavored, with a great texture, easy to cook. It also brings a terrific nuttiness to this side dish. If you’re willing to go meatless, this could make a simple main course when paired with a salad.
